Using their signature technique of cold-soaking the Petite Sirah portion of the co-ferment before infusing it into the fermenting Zinfandel ten days later, the winemaking team locks in freshness and accentuates the wine’s natural elegance. A dash of Carignane adds acidity and structure, while aging largely in small concrete tanks preserves the wine’s vibrancy.
